An outdoor staple- ‘Mom's' Baked Beans recipe

May 30, 2019

By Claire Stabbert - columnist

There is nothing I personally like more than a family BBQ on my parents' deck, having an ice cold drink and some of my dad's famous ribs or Teriyaki glazed steak.
My dad or uncles man the grill, my aunts bring the side dishes and appetizers, and if we are lucky enough, my aunt Laurie brings her famous pies. I am very lucky (and cursed) because all of my aunts are great cooks.
This week's recipe is a week too late, as many of you probably had a fantastic BBQ during this gorgeous Memorial Day weekend, but if you are anything like my family, you will have plenty more in the months to come.
My friend from college, Courtney, has a mom that makes everything from scratch, and when I asked for some good BBQ side dish recipes, she gave me her mother's homemade crockpot baked bean recipe. It was written on an old index card with about 50 stains on it, so you know it's good.

Mom's crockpot beans is 1 can of butter beans drained, 1 can kidney beans drained, 1 can Campbell's pork and beans (large), 1/2 lb bacon fried and crumpled, 1 large onion chopped, 1 cup ketchup, 1/2 cup brown sugar, 2 1/2-3 tbsps mustard, and 1/4 cup apple cider vinegar for tang. Place all ingredients in the crockpot on low for 4-6 hours!
I am making this side dish this week with some sage pork chops, the sage picked fresh from my herb garden I planted! (Remember last week's column).
This dish would be fantastic for a BBQ, tailgate, family gathering, or, I'm just making it for a side for my dinner, and I can pack it for lunches all week long!
The great part is that not all ingredients are coming out of a can, and you're really cutting out sodium by not buying everything pre-made.
Enjoy this BBQ staple.
