I hope you all had a wonderful Thanksgiving with your loved ones and delicious food around the table! This month each week I will be serving up holiday recipes that I truly can’t get enough of. My husband might even be willing to give up his famous rum ball recipe if I ask nicely.
This week is Brenda Manzi’s Swedish meatball recipe. Brenda is a dear friend of the family, and my mother inherited this Swedish meatball recipe which I get to enjoy each holiday season. If you have a meatball recipe that you love, by all means make them homemade before adding to your slow cooker. However, I am all about the shortcuts when dealing with the busy holiday season.
The key is to buy frozen meatballs that are specifically made for Swedish meatball recipes (traditionally they are made with allspice and nutmeg). If you can’t find them in stores it isn’t a deal breaker, but certainly enhances the flavor. Another tip is use full-fat sour cream to ensure that this dish does not curdle.
You will need:
A 3 lb. bag of Swedish meatballs
32 oz beef broth
3 tablespoons A1 steak sauce
1 packet of Lipton onion soup
16 oz sour cream
Look at that list of ingredients. How can this dish possibly come out bad? Add your meatballs to the bottom of your slow cooker. Slowly add in your remaining ingredients EXCEPT your sour cream. Cook 2 hours on high or 4 hours on low. Finish with sour cream about 15 minutes before the end of cooking time.
I love this dish because it is like a huge umami bomb in your mouth. Anything savory I absolutely love. Typically when my mom makes these appetizers, I eat way too many and then have no room for the main course. (I am letting you know in advance this is a recipe you need to cut out and save).
