If you are anything like my family, you are staying in your houses with the occasional run to the grocery store and pharmacy, and just trying to find a bit of normalcy in the chaos.

My good friend Steven uploaded a tutorial of his famous frittata and it was a great way to bring my family around the table and eat some delicious food.

You will need a dozen large eggs, veggies chopped of your choice,(I used 1/2 green pepper diced, 1/2 red pepper diced, 1/2 yellow onion diced, 5 baby bella mushrooms chopped, a handful of spinach chopped, and 1 block of cheese of your choice shredded (I used Munster because that is what we had on hand).

Simply place all eggs into a bowl and whisk. Season heavily with salt and pepper. Place your veggies into the bowl with the eggs and whisk again until all veggies are coated with egg. (Feel free to sweat your onions and mushrooms in a pan before whisking for additional flavor!)

Once combined, add to a greased baking dish and top with shredded cheese of your choice. This would be wonderful with Swiss or pepper jack! Set your oven to 375 and bake for 30-35 minutes.

Your frittata will rise about an inch on the sides and half inch in the middle. Cut into squares and serve! I hope everyone is staying healthy and calm. Thinking of all of you. Xo
