As I’ve gotten older, I’ve come to love salmon. It’s definitely an acquired taste. My father and I love it, and my mother and husband are not big fans. I guess not everyone can be perfect! My dad typically will cook us salmon on the grill, but here is an easy recipe you can make right in the oven. It comes together in about 20 minutes with ingredients right from your own pantry! You will need
4 tbsp olive oil
6 salmon filets
salt/pepper
1 T honey
1 T dijon mustard
1 T lemon juice
Fresh herbs for garnish
Drizzle a large sheet tray with 3 T olive oil and spread evenly. Place your salmon on the sheet tray. Whisk your remaining 1 T olive oil, honey, dijon, lemon juice and salt and pepper and drizzle evenly over the filets. Bake 12-15 minutes. Be careful when cooking- it doesn’t take long for salmon to go from delicately moist to dry and overcooked. If you see the white proteins firm up on top—it’s most likely time to pull the salmon from the oven—it’s cooked! I like to place my salmon over a bed of lettuce, with some fresh dill and chives overtop and ginger dressing on the side. I hope everyone has a wonderful Father’s Day!
