Rotissarie chicken tacos

This recipe is as easy as it sounds. Everyone loves a succulent rotissarie chicken and although roasting one myself would be so satisfying, I simply do not have the time or energy to make one after a long day of working (am I right ladies?)

One of my favorite weeknight meals with my guy is tacos and every Tuesday, we try to stick to this weeknight meal. A good friend introduced me to this amazing hack years ago and I have never looked back since. You'll find that using a rotissarie chicken will give you such juicier meat than shredding and cooking chicken breasts in the skillet for tacos.

For weeknight chicken tacos you will need 1 rotissarie chicken, 1 packet of taco seasoning, shells of your choice, and toppings of your choice ( please choose a great salsa), margaritas are optional but always recommended. All you need to do is take a rotissarie chicken and shred all the meat off the bones then place it into a skillet to warm up on medium heat.

Next, I add in 2-3 tablespoons of water with the taco seasoning packet. The water will burn off and the chicken will stay moist and succulent. Heat up your shells and after 5 minutes on the burner your chicken is ready for dinner. You will never look back after this life-hack.
