Weeknight Broccoli Chicken Cheddar roll ups

A co-worker of mine swears by her broccoli chicken roll ups, great for both her and her husband, and her kids.

The ingredients are 4 chicken breasts, 1 cup cooked broccoli florets, 8 slices of sharp cheddar cheese, 2 eggs, 3/4 cups seasoned breadcrumbs, and salt and pepper to taste. Begin by preheating your oven to 425 degrees.

Prepare a paper plate with the breadcrumbs and a bowl with both eggs beaten and set aside. Spray a baking dish with non-stick cooking spray and also set aside. Lay out your chicken cutlets on a flat surface on waxed paper and season both sides with salt and pepper.

Place 2 slices of cheese on each piece of chicken, layered so they cover most of the chicken and place a couple of spoonfuls of broccoli on each and then a sliver of butter on the top.

Roll up each piece folding in the sides the best that you can, and dunk in the egg mixture and then dredge through the breadcrumbs. Place seam side down in a baking dish and secure the ends with toothpicks.

Bake at 425 for 25-30 minutes or until top is golden and chicken has internal temp of 165 with an instant read thermometer. Her two young boys love eating this on weeknights, and it has become a family staple.
