I have been getting a ton of requests for easy weeknight meals, and I stumbled upon the perfect recipe on my Weight Watchers app.

The wonderful thing about Weight Watchers is there is a free directory of unlimited healthy recipes. I came across this chicken dish with black bean salsa, and with just 6 ingredients, it's about as easy as it comes; perfect for me and my busy schedule.

This dish is just like a chicken enchilada but without the carbs, and at just 5 points per serving, it's well worth making. It's the perfect way to spice up your regular chicken. I even have made more servings to bring for lunch the next day and serve over rice. This recipe serves two, so feel free to double if you are serving a family of 4.

All you will need are 2 uncooked boneless skinless chicken breasts, a can of black beans drained, fat free mild salsa, table salt, black pepper, and fat free shredded cheddar cheese.

Pound out your chicken breasts to your desired thickness, and cook chicken until cooked through, about 6 minutes per side. In a bowl, mix beans with salsa and season to taste. Divide bean salsa among the cooked chicken breasts and top with cheddar cheese. Broil a few minutes until cheese is melted and beans are warm. That's it!

My boyfriend and I loved the salsa bean mixture and even ate them on the side. I hope that this dish gives you an easy weeknight meal to make! It sure is delicious.
