Bok Choy with Garlic & Ginger

Summer is a great time to explore fresh vegetables from local farms and farmers' markets. If you're looking for a quick, flavorful side dish, this Bok Choy with Ginger & Garlic recipe comes together in just 10 minutes using only a handful of ingredients. Recommended by Alan Carroll, Food Systems Program Manager at Cornell Cooperative Extension Sullivan County, this recipe was a favorite during last year's Sullivan Fresh Market cooking demonstrations.

Bok choy is a type of Chinese cabbage and a member of the cruciferous vegetable family, alongside broccoli, kale and Brussels sprouts. It is an excellent source of vitamins C and K and provides calcium, magnesium and other nutrients that support overall health. Its mild flavor and crisp texture make it an easy addition to stir-fries, soups or simple vegetable side dishes.

Yields: 4 Servings

Prep Time: 10 min

Ingredients:

1 Bunch Bok Choy

1 Tbsp Olive oil

2 Cloves Garlic

2 Tbsp Ginger

1 Splash Water

Directions:

Heat oil in pan

Toast Garlic and Ginger for 30 seconds

Add Bok Choy and cook for 2 minutes while stirring

Add a splash of water and cook for 2 minutes while covered

Add salt and pepper to taste.
