Here it is... my last ramp recipe for the season. There is just something about a simple lemon pasta that I absolutely love, so why not add some seasonal ramps to it? This could be a simple weeknight recipe for a family of 4, or make it for guests on a weekend! It comes together quickly and highlights the bright flavors of spring. Peas or asparagus tips in this dish would be a great addition as well!

Begin by prepping your ramps. Wash them well with ice cold water. Thinly slice the bulbs and cut the leaves into ribbons and set aside.
Boil your pasta in well-salted water until al dente. You want your water so salted, that it tastes like the ocean. This is going to help add some flavor into your pasta. Reserve one cup of the pasta water, and then drain.
Heat the olive oil and butter in a large skillet over medium heat and add in your sliced ramp bulbs (white part). Sauté for 2-3 minutes until soft and fragrant, then add in your ramp leaves until wilted (about 1-2 minutes). Next, stir in your cream, lemon zest, lemon juice, and simmer for 3 minutes.
Add your pasta to the skillet and toss well, adding some reserved pasta water to help to emulsify the sauce.
This next step is very important: freshly grate your parmesan cheese when adding it into a sauce. I've noticed if I do not use freshly grated, it begins to clump and does not melt into the sauce properly. Slowly stir in your fresh parmesan cheese, salt, fresh cracked pepper, and a pinch of red pepper flakes for some spice.
Top with extra parm and some crumbled bacon if you'd like!
