I really am about to change your life. Recently I heard about the viral “cottage cheese bagels” from one of my favorite influencers, Bethany Frankel, and I simply cannot stop making them. 

They have 11 grams of protein, and are a great vessel to put just about anything you want on them without the guilt of eating bagels regularly.

 Lately I’ve been smearing them with  some smashed avocado, but deli turkey meat and some juicy tomatoes on these protein packed cottage cheese bagels sounds like an incredible snack to me! 

The best part? 

There is no rising time required and minimal ingredients! Trust me, I am not a baker by any means,  but I easily figured this out. These bagels store well in the freezer, so feel free to make them in advance and pop into the toaster whenever you want a quick snack!

You will need:

1 ¼ cup blended cottage cheese (blend or pulse in a food processor for a few seconds)

1 cup flour

1 ½ teaspoon baking powder

1 egg beaten (for egg wash)

Toppings of your choice (I use everything bagel seasoning or sea salt)

Blend 1 cup of cottage cheese until smooth. Transfer it to a bowl and add in your flour and baking powder and mix until it starts to pull away from the bowl. 

Flour your surface and hands and using a bench scraper or knife, divide your dough into four equal parts. Roll each part out into a rope, about 1 inch thick and then join the ends to make into a bagel shape. 

Don’t worry about anything looking perfect, just trust the process. Lay your bagels onto parchment and brush with a beaten egg.  I like to sprinkle on some “everything bagel” seasoning as a topping, but flakey sea salt or some asiago shredded cheese would work great as well! 

Bake at 375 for 30 minutes until puffed and golden. Let it sit and cool for 15 minutes and enjoy! Want to air fry these instead? Preheat your air fryer at 350 and then air fry for 15 minutes! Voila!
