Arugula salad with Fig Dressing

If you are looking for the perfect quick and easy holiday salad- this is it. This salad is my cousin’s recipe that she makes on special occasions. There is acidity from the vinegar, sweetness from the jam and honey, and saltiness from the cheese, and it all comes together in a matter of minutes. 

Dressing:

1/4 cup balsamic Vinegar

1/2 cup olive oil

1 tablespoon of fig jam

1/2 teaspoon of salt or to taste

pinch of pepper

teaspoon of dijon mustard

teaspoon of honey

Salad:

5 oz box of arugula

4 ounces of pine nuts toasted in a pan on a low heat - watch very carefully  to make sure it doesn’t burn and make sure the pine nuts are cooled before adding them to the salad.

1 honey crisp apple diced

1/4 of a pound of parmigiano regianno cut into ribbons with a potato peeler

Fresh figs, quarter (optional)

Whisk your dressing ingredients together until combined and thickened. 

Combine all of the salad ingredients together with a couple of tablespoons of the salad dressing (save the rest in your fridge to use for other salads). Remember to add the dressing slowly (start with 1 or 2 tablespoons) and mix it together so that you do not end up putting too much dressing in and overdressing the salad. No one likes a soggy salad!
