Watermelon Cucumber Margarita

There is something about a really nice refreshing margarita in the summer that I just love. You could make this when hosting a party or friends, or simply keep this juice in your fridge for when you want to treat yourself to a nice cocktail. I like to garnish with cucumber but if you have some fresh herbs growing in your garden, mint would be a lovely addition as well. 

For the Watermelon Cucumber Juice:

¼ of a large seedless watermelon roughly chopped

½ of an english cucumber peeled and chopped 

agave to taste (optional)

For the Margarita:

Tajin or salt for the rim

3 slices jalapeno

1 oz triple sec

2 oz tequila

1 oz fresh lime juice

5 oz watermelon cucumber juice (see above)

ice

Begin by making the watermelon juice by adding watermelon and cucumber to a blender and blend until smooth. Strain through a fine mesh sieve (this is going to take out all the pulp and chunks) and add agave to taste if desired. Dip the rim of the glass in lime juice and then tajin or salt and set aside. To make one drink, muddle the jalapeno in the bottom of a cocktail shaker. Add in triple sec, tequila, lime juice, and ¾ cup of your watermelon juice. Add in ice and shake well. Add in more ice into your glass and serve over. Enjoy! Note: this recipe will make about 1 quart of watermelon cucumber juice, which is enough for about 4-6 margaritas.
