Honey Glazed Baked Ham

I’ve officially reached that age.... The age where I am excited about winning a free ham at the grocery store. Many of you I am sure know the feeling, and might even currently have a ham portion in your freezer or fridge.  This week’s column is a double header: how to cook your free post-holiday ham, and an idea for what to do with some of the leftovers.

My parents cooked a lovely ham during the holidays with a nice glaze. I made my own glaze and (not to brag), my husband said it was the best ham he has ever had. This glaze can be made with everything you already have in your pantry. 

For the glaze you will need: 

1 1/2 cups light brown sugar

1 cup honey

½ cup dijon mustard

2 tbsp unsalted butter

2 tbsp apple cider vinegar 

I cooked my ham for 20 minutes per pound under foil at 275. Combine the glaze ingredients and heat in the microwave or over the stovetop until they are melted and well mixed. When the ham has about 30 minutes left, remove from the oven and baste with the warm glaze before returning to the oven uncovered. The butter adds a nice silkiness to this glaze and it ended up tasting absolutely perfect.

My next job was figuring out how to utilize 9 lbs worth of leftover ham. I managed to cook this behemoth of a ham for only two people, which isn’t super surprising if you’ve seen the amount of food I typically make for dinner. I channeled my grandmother Shirley and made an incredible split pea soup, as well as a lovely ham, leek & swiss cheese quiche. 

Quiches are so underrated in my opinion and so easy to make. All you need are eggs, milk, and pie crust and you have a complete meal packed with protein. They’re so much more interesting than an omelet in my opinion. I love serving them for breakfast, lunch, or dinner with a nice acidic side salad. 

You will need:

6 eggs

2 chopped sauteed leeks (green and white parts only)

¾ cup of milk

1 cup shredded swiss cheese 

1 cup cubed ham

1 baked pie crust

Toss it all in the pie crust and bake for 40 minutes at 375. Absolute perfection!
