The Cabin’s next chapter

JEFFERSONVILLE – Foster Supply Hospitality (FSH), the hospitality group behind a collection of Western Catskills region hotels and restaurants, have announced that they will transfer operations of The Cabin at Hessinger-Lare to Chef Kristian Unvericht as of March 20.

“We have loved owning and operating this Sullivan County landmark,” says FSH Co-Founder Sims Foster. “We love the wings, the burgers, the beers and most importantly the team that keeps the place humming and the guests that keep coming back. The Cabin is part of the fabric of our community.

“We are proud to be transferring this great place to Chef Kristian. He has deep experience as an Executive Chef and General Manager. He has been in the area for years, has two young kids he is raising here and we truly believe that The Cabin’s next chapter will be a very exciting one,” says Foster.

Chef Kristian grew up in Tucson, Arizona and started working in restaurants at age 19. Since then, he’s worked for multiple James Beard Award winning chefs for the last 20-plus years in Arizona, Portland, Oregon and Seattle, Washington.

Moving permanently to Sullivan County in 2016, Kristian quickly realized he could help bring more exposure to Mexican and Latin American food locally and launched “Artemisa Cat­skills.”

In January of 2021, Kristian started selling Latin American take home meals during the height of the pandemic, an idea that evolved into a food truck, which was booked all Summer.

Chef Kristian is thrilled to continue to showcase his passion for food and this area in this new chapter of his culinary career.

“Being Mexican and growing up in Arizona, I wanted to use my culinary experience to bring those flavors to the Catskills,” says Chef Kristian Unvericht. “I plan to keep The Cabin favorites on the menu and also expand with great tacos, tortas, and traditional flavors from Mexico. This will be my first time owning a restaurant after 20-plus years in the business, and I am most excited to express myself and the flavors of my culture, in a longstanding restaurant loved by so many in the community. I feel honored to have this opportunity.”

“I’m planning to reopen by the end of March under The Cabin name to honor the restaurant’s longstanding legacy in the county,” says Chef Kristian.
